Ingredients:
• 2 1/4 cups All-Purpose Flour (281 grams)
• 1 Tablespoon Baking Powder (8 grams)
• 3 Tablespoons Sugar (24 grams)
• 1/2 Teaspoon Salt (1 gram)
• 1 Teaspoon Cinnamon (3 grams)
• 2 Large Eggs *separated*
• 1/2 Cup Vegetable Oil (63)
• 2 Cups Milk (250)
• 1 Teaspoon Vanilla Extract(3 grams)
• 1 Waffle Iron
Instructions
1. Preheat waffle iron, spray with non-stick cooking spray
2. Whisk the flour, sugar, baking powder, cinnamon, and salt together in a large bowl.
3. In a medium bowl, beat the egg whites with a hand mixer until stiff peaks form, set aside
4. In a separate bowl, mix the egg yolks, vegetable oil, milk, and vanilla extract.
5. Add together the yolk mixture and dry ingredients and mix well.
6. Fold in the egg whites.
7. Pour batter onto waffle iron and close the waffle iron.
8. Reopen the waffle iron, serve with syrup, butter, or powdered sugar.
