1. In a large skillet, heat 1 tablespoon neutral oil. Add peppers and onions and season with salt. Cook for 5 minutes and set on plate.
2. Add 1 teaspoon neutral oil to man over medium heat. Add chicken to pan and season with chili powder
3. Add another teaspoon of oil, and place 1 flour tortilla onto the skillet. Cover top half with cheese, 1/4th of the chicken mixture, and 1/4 of the pepper mixture.
4. Repeat steps 1-3, cut tortillas into wedges and serve.
